My friend Dave was chatting about kumquats on Facebook the other day. What, your friends’ status updates don’t involve kumquats? The conversation carried on and eventually led to the idea for a kumquat margarita. Being a cocktailing kind of girl, I decided to rise to the challenge. I created a kumquat cocktail a while ago and never imagined I’d be rolling those little babies around my bar again so soon. Kumquats really are a tactile pleasure and add a tish of sweet yet tart kick to a drink. And darn if they aren’t just stinkin’ cute little things. Kumquats are the cherry tomato of the citrus world. Because you eat the kumquat whole, skin and all, they make for a great blender drink. Of course, I’ll be using my Ninja Kitchen.
Kum On!
1 1/2 ounces tequila (Remember, if it’s a brand you bought in college, don’t buy it now as a grown up!)
1/2 ounce triple sec (Every time I say this my brain says, “Wait a sec.” Is it just me?)
3-4 ounces limeade
5 or so kumquats, seeded (Just cut them in half and pop out the seeds.)
Small handful fresh mint
Muddle the mint in a highball glass and top with ice. Set aside. Put tequila, triple sec (wait a sec…See what I mean?!), limeade, and kumquats into a blender and pulse. Strain into ice filled glass. This drink will be colorful and pretty so no need for additional garnish.
Now go take a look at Facebook and see if your friends’ updates inspire any drinks (not to be confused with inspiring you to drink). Kum on!

100% agree with your comments above. We should wear it as a badge of honor that we are still the only state in the South that doesn’t have this type of discrimination on our constitution. For me personally it’s worst because living in Raleigh, you meet a lot more people who like you and me are way beyond this ridiculous Amendment, and who see it for what it is, a backwards policy and ridiculous political stunt.
However, I can’t say the same for the entire state. It will be very telling to see the results of this Amendment as a measure of where the state is socially. I’m sure we’ll see the political tie ins when the final votes are tallied. I just hope for our state’s future it’s not that people like us are still either a minority or just have less of an influence to get people out to vote.

@Manuel, I have traveled around the state and find it alarming that there is so much support for this amendment in other areas. We have a lot of work to do before May 8!
