I have a love/hate relationship with summer. I love the flowy dresses and kicky wedge sandals but hate the mosquitoes and creepy crawlies. I love the fresh earthen vegetables and the smell of the grill fired up but hate the oppressive humidity. I love having my sons home while we enjoy a slower pace and lazy days. I hate having my sons home when they bicker and make noise and break things.
Summer is upon us. Next week marks the end of third and first grade for my boys. I cannot believe it. Time must be strapped to a rocket turbo engine because the sucker flies at warp speed. We relax our schedule in the summer. Bedtime is a tish later, and our sweet treats are a tish more frequent. We also stay in our pajamas a lot later so don’t be alarmed if you pop in for a visit after lunch and we’re still lounging around in boxers.
The one thing summer ushers in that I deliriously love is a cool Pimm’s cocktail. I think I might have audibly sighed just writing that.
Herbalicious Pimm’s
2 ounces Pimm’s
2 ounces lime soda (Hansen’s is a good bet.)
handful of fresh basil
handful of fresh spearmint
1 lime, cut into wedges
Muddle fresh herbs and lime in a cocktail shaker. Add ice, Pimm’s, and lime soda. Shake. Shake some more. Pour into an ice filled tall glass. Plop in a lime wedge and some bits of fresh herbs to jazz it up.
Sit back and savor summer.
