As you know, I love me some bubbly. Way back in our pre-kid Sunday-mornings-with-the-paper days, Mac Daddy and I used to indulge in mimosas as we lazily lounged. Good grief, we need to revive those days.
A friend gifted me a jar of luscious orange syrup, the result of her homemade candied orange slices (OMG…divine). It’s a treat for sure. I’ve taken to adding it to prosecco to make a mimosa-like drink that’s more bubble than juice. The orange essence of the syrup adds a refreshing blast of citrus without diluting overpowering the bubbly. Just add a scant teaspoon to a champagne flute and top with prosecco. You can add a tangerine slice or a sprig of fresh thyme if you want to be fancy. I prefer no garnish in this case. I mean, chances are I’ll still be in my PJs and fluffy slippers drinking this so why exert more effort than necessary?
Cheers to you this weekend! May you toast all the goodness in the world and focus on how to change the rest.
