Perhaps you remember Holly Golightly in Breakfast at Tiffany’s giving the weather report to Sally Tomato. In her case the weather report was some mobster code. In my neck of the woods everyone is talking about the weather too. Mostly whether the weather will ever cool off. While my years in Minneapolis were akin to living as a pork butt in a freezer, my summer here in Raleigh is much like being a pork butt in a crock pot.
It’s been bloomin’ HOT here.
The heat leaves us hankering for something to bring a refreshing chill to our bones, but not in a redrum sort of way. My friend Gabby posted on Facebook about a marvelous cocktail she was enjoying on one particularly sweltering evening. I was drooling and insisted on snagging that recipe for my virtual glass clinking friends.
And Gabby indulged me.
Pineapple Margarita
Ingredients:
* 2 cups lime juice, about 20 limes
* 2 cups white tequila
* 2 cups Triple Sec
* 2 1/2 cups fresh pineapple juice
* Fresh pineapple slices, for garnish
Grab a blender. Toss in the lime juice, tequila, Triple Sec, and pineapple juice. Add ice and some chunks of pineapple. Blend and pour into margarita glasses. Garnish with fresh pineapple slices and serve ice cold. I bet a lime wedge would make for a perky garnish too.
Perfect for chilling out.
And in case you need some cocktail party fodder…Did you know that Alan Reed, the actor who played Sally Tomato in Breakfast at Tiffany’s, was the voice of Fred Flintstone and creator of the famous Yabba Dabba Doo?
