I love to putz in the kitchen. I make up recipes and mostly follow my nose and instinct. I don’t own measuring spoons and I define everything by pinches and dollops and tishes. When The Motherhood asked me to join with other Raleigh bloggers to create a Labor Day holiday grill feast, including recipes and cooking and dining together, I just had to say yes. The challenge was to use Lawry’s Seasonings and marinades in each dish.
We focused on easy dishes with marinades that allowed the cook (or cooks) to do things ahead of time and in stages. There’s no sense in hosting a holiday gathering if you don’t get a chance to visit with your guests. Our menu looks and tastes impressive with a decidedly simple yet special occasion feel. It would be great for grill feasts to celebrate any holiday!
I knew Lawry’s made seasoned salt and I knew I had eaten a glorious steak at Lawry’s The Prime Rib in Chicago. But I admit that I didn’t have Lawry’s in my pantry. All the Team Raleigh members got a package of seasoned salt and a couple new marinades. The first thing I did was read the labels, as I am wont to do.
No MSG.
No high fructose corn syrup.
Even a low sodium version of seasoned salt.
Lawry’s new marinades are nice to have on hand for a short cut or added oomph to your own marinade creations. Looks like I’ll be adding Lawry’s to my shopping list.
Now take a look at what we conjured up and cooked. There were giggles, newly sharpened knives, fresh herbs, a somewhat mosquito-free night, non-stop conversation, and wine. We do enjoy our wine. And we do enjoy our chit-chat.
Five Points Flank Steak
1 cup Lawrys Original Seasoned Salt Marinade
½ fresh pineapple, cut into chucks
2 chipolte peppers in adobe sauce
½ cup ginger beer
¼ cup of olive oil
2 cloves garlic
flank steak (about 2 pounds), trimmed of excess fat
Add first six ingredients to food processor (We used the Ninja Kitchen.). Pour liquid into a large glass casserole dish, and add meat whole. Turn to coat the flank steak. Marinate at least three hours (turning occasionally) or overnight. Grill about three to four minutes each side, let rest for about five minutes, and slice against the grain to serve.
Garnish: Cut up remaining pineapple into slices, marinate with flank steak, grill, and use as an edible garnish.
Vegetarian Option: Marinate portobello mushrooms instead of flank steak using the same recipe above, and grill each side until done, about two minutes per side.
Carolina Corn Salad
2 roma tomatoes, diced
¼ cup of fresh cilantro, chopped
¼ cup of olive oil
2 tablespoons of Lawrys Balsamic Herb Marinade
juice of 1 lime
¼ teaspoon of Lawrys Seasoning Salt
1 serrano pepper, seeded and dice (optional, but oh so good)
2 ounces crumbled queso fresco (optional)
Grilled Fennel, Radicchio, and Vidalia Onion, the Raleigh Way (Side Dish)
1 whole head of radicchio, quartered
2 bulbs of fennel, thickly sliced
1 large vidalia onion, thickly sliced
½ cup of Lawrys Balsamic Herb Marinade
1 TBS brown sugar
cracked black pepper, to taste
Lawrys Seasoned Salt, to taste
Combine radicchio, fennel, and vidalia Onion in large bowl. Pour ½ cup of Lawrys Balsamic Herb Marinade over vegetables. Add brown sugar and freshly cracked black pepper, (approximately five good twists of the pepper mill) and sprinkle mixture with Lawrys Seasoned Salt. Toss vegetables well. Arrange seasoned vegetables on grill pan or foil, grill for approximately 15 minutes until vegetables are tender. Brush with marinade during grilling of the vegetables are drying out. Toss gently on a platter and serve warm or at room temperature.
Capital City Herb Butter with Whole Wheat Flatbread
1 stick of unsalted butter, room temperature
1 tsp of Lawrys Seasoned Salt
Clove of fresh garlic, crushed
fresh thyme, ¼ quarter cup
whole wheat flat bread
Combine butter, Lawrys Seasoned Salt, garlic, and thyme. Mix well. Spread herb butter mixture onto flatbread. Stack bread on top of each other, wrap it in foil, and heat on grill. Cut into quarters to serve.
Fruit Salad (Yummy Yummy)
1 Cantaloupe
1 Honeydew Melon
1 pint of Strawberries
1 personal sized Watermelon
1 pint Blueberries
1 TB Lawry’s Balsamic Marinade
Ginger Lime Simple Syrup (see recipe below)
Marscapone Cheese
Start making Ginger Lime Simple Syrup (recipe below). Cut strawberries into thin slices and marinate in one (1) tablespoon of Lawry’s Balsamic Marinade. While marinating, finish cutting up rest of fruit into bite sized pieces. Add strawberries. Gently pour cooled ginger lime simple syrup over fruit and toss gently to combine all flavors.
Serve with Marscapone Cheese or Creme Fraiche.
Ginger Lime Simple Syrup
1 cup sugar
1 cup water
1 thumb sized piece Ginger – peeled
1 lime
Add water and sugar to heavy bottomed pot. Put on burner over medium heat. Add ginger and zest from the lime. When syrup bubbles and sugar has dissolved, set aside to cool.
Bloody Marytini (sorry, no photos…GAH!)
2 ounces Pepper vodka (Absolut Peppar)
1 ounce tomato juice
Splash of clam juice
Squeeze of lemon & lime
Lawry’s Seasoned Salt
Pickled green bean garnish Pour some Lawrys Seasoned Salt Fill into a small dish. Rub a lime around the edge of a chilled martini glass and dip into the salt. Set aside. Fill a cocktail shaker with ice. Add vodka, tomato juice, and clam juice. Give it a good shake and strain into chilled, salted martini glass. Squeeze a lemon and lime wedge into the glass and garnish with a pickled green bean.

I am “famous” (among my friends) for my marinated London Broil. I usually do a teriyaki marinade but the flank steak recipe with pineapple sounds fabulous! I was just diagnosed with high blood pressure so do you think the low sodium Lawry’s would taste just as good. Trying it out Labor Day weekend, no matter what!
