Somehow in the last week or so I missed National Wine Day (why only a day?!) and National Margarita Day. Well, I did make myself a margarita but I neglected to post a recipe for 5:00 Fridays (though the one I did post was mighty tasty). I was hell bent on celebrating Margarita’s big day so I conjured up something that was a serendipitous success, especially considering I had no limes. I did, however, have oodles of Meyer lemons.
Meyer Lemon Margarita
3-4 ounces tequila (I used Espolon.)
Juice of 4 Meyer lemons1-2 ounces
Cointreau (or substitute juice of half an orange)
2 tablespoons organic blue agave sweetener
splash of bitter lemon soda (I used Stirrings brand.)
Fill a cocktail shaker with ice. Add tequila and Meyer lemon juice. Pour in Cointreau and agave sweetener. Give it a vigorous yet gentle shake. Strain into a rocks glass filled halfway with ice. Add a splash of bitter lemon soda. Plop in a Meyer lemon wheel to spruce things up.
This is fantastic, people. You can even double or triple or quadruple the quantity and make it for a crowd. Your friends will ensure everyday is National Margarita Day. Just don’t overindulge. There’s no need to celebrate National Hangover Day.
