Summer is fading. I can tell the days are already getting shorter. Our after work romp time darkens more quickly than just days ago. School starts in a few weeks, and I feel like we never got around to really embracing summer. I have so many undone summery things on my list. There bubbles yet to be blown, kites yet to fly, stories yet to write. Bird and Deal will tell you that our summer has been unfulfilling because this is the first summer I have worked. Their words of honeasty have been daggers to my heart. I tell myself that children are resilient. The thing is, mothers…not so much.
But that’s a story for another day.
Among my list of untouched summer goodness are several bottles of riesling that a friend gave me. What to do with all this wine? Well, the obvious answer is, check Pinterest! The Marvelous Misadventures of a Foodie happened to have a fantastic recipe that I tweaked ever so slightly to make the drink a tish less sweet.
Sparkling White Peach Sangria
1 (750 ml) bottle Riesling
4 peaches, cut into wedges
1/2 cup peach vodka
1 (750 ml) bottle chilled sparkling wine
peach slices (for garnish)
In a large glass pitcher combine riesling, peaches, and peach vodka. Chill for 3 hours or until you can’t bear waiting any longer. When ready to serve, pour in sparkling wine and stir gently. Garnish with a peach slice.
Now, sit back and savor summer. What’s left of it.
